Spelt Waffles

Ingredients

  • 1 cup freshly milled spelt (or soft white) flour
  • 1/2 cup regular flour
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1 egg
  • 2 tablespoons melted butter or oil

Instructions

  • Preheat your waffle iron according to the manufacturer’s instructions.

  • In a large mixing bowl, combine the spelt flour, sugar, salt, and baking powder.

  • In a separate bowl, whisk together the milk, egg, and melted butter or oil.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.

  • Lightly grease the waffle iron if necessary. Pour the batter onto the preheated waffle iron, using the amount recommended by the manufacturer.

  • Close the lid and cook until the waffles are golden brown and crisp. Cooking time will vary depending on your waffle iron.

  • Carefully remove the waffles and serve warm with your favorite toppings.
