Apple Dumpling Cake

Ingredients

  • 3 lbs. apples

  • 2 cups all-purpose flour

  • 1 1/2 cups white sugar

  • 2 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 eggs

  • 1/2 cup butter

  • 1 1/2 teaspoons ground cinnamon

Instructions

  • Peel, core and slice the apples.

  • Beat the eggs lightly until well mixed.

  • Melt butter until liquid (but not too hot).

  • Mix together flour, sugar, baking powder and salt in a medium sized bowl. Stir in eggs and butter.

  • Preheat oven to 350F and lightly grease a 9x13 in backing dish.

  • Place sliced apples in layers at the bottom of the baking dish; then pack mixture on top of the apples. Sprinkle with cinnamon.

  • Bake for 40-45 min. or until the topping is puffed and golden brown. Wait until cooled and cut into squares.
