Apple Dumpling Cake
Ingredients
3 lbs. apples
2 cups all-purpose flour
1 1/2 cups white sugar
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
1/2 cup butter
1 1/2 teaspoons ground cinnamon
Instructions
Peel, core and slice the apples.
Beat the eggs lightly until well mixed.
Melt butter until liquid (but not too hot).
Mix together flour, sugar, baking powder and salt in a medium sized bowl. Stir in eggs and butter.
Preheat oven to 350F and lightly grease a 9x13 in backing dish.
Place sliced apples in layers at the bottom of the baking dish; then pack mixture on top of the apples. Sprinkle with cinnamon.
Bake for 40-45 min. or until the topping is puffed and golden brown. Wait until cooled and cut into squares.
