Banana Bread Recipe

Jean’s Banana Bread

Ingredients

  • 1/2 cup butter (or marg)
  • 2 eggs
  • 4 bananas (soft and brown)
  • 2 Tbsp sour milk (vinegar and regular milk if no sour milk)
  • 2 cups flour
  • 1 tsp soda
  • 1/2 tsp salt
  • 1 cup sugar

Instructions

Using a mixer, cream butter and sugar together. Add eggs one at a time.

Next add sour milk. (To make sour milk, put the scant 2 Tbsp milk into small cup and add a smidgin of vinegar. It will look curdled.)

Now add the flour, one cup at a time, with the soda and salt in between cups. Mix well.

Then add mashed bananas, or if quite soft, just slice them up into the batter and mix in.

Pour batter into a greased loaf pan. (Spray with Pam or smeared with marg, butter or oil.)

Bake at 350 degrees for 1 hour. Take a long toothpick or skewer to test in the middle to see if done.

There will be no batter clinging to the toothpick if it is done. Let cool in the pan on its side, for a while before you knock it out. Slice with a bread knife (serrated edge).
