Blini ( Crepes) Recipe

Zina’s Blini

Ingredients

  • 1 egg
  • 1 cup flour
  • 1 cup milk (kefir is better)
  • 1/4 tsp baking soda
  • tiny bit of vinegar or mineral water (for baking soda)
  • 1 tsp sugar
  • pinch salt
  • vegetable oil (for frying)

Instructions

  • Mix all ingredients with a mixer until well blended. Make sure the mixture is very runny. Add milk if mixture is not runny enough.

  • Head a medium-sized pan on highest heat. Add a small bit of vegetable oil and pour a ladel of mixture onto the pan, spreading it evenly. It helps to hold the pan at a sharp angle and start pouring mixture at the top of the base, letting it flow down and make a nice thin circle.

  • If the pan is hot enough, the blin will need to be flipped within 10sec of the pouring. Use a spatula. Each blin should be done within ~30sec. Add a bit of vegetable oil to the pan after every blin.
