Blueberry Chocolate Chip Baked Oatmeal (Laura Jacobson’s Recipe)
Ingredients
- 1 1/2 cup old fashioned rolled oats
- 1 1/2 cup quick oats
- 1/2 cup honey
- 1 1/2 teaspoon baking powder
- 1 1/2 teaspoon cinnamon
- 1/2 tsp salt
- 1 cup strawberries (cut up)
- 1 cup blueberries
- 3 cup milk (or almond milk)
- 2 eggs
- 1 cup chocolate chips
- 3 tsp vanilla
- 5 tbsp melted butter / coconut oil
Instructions
Butter/spray a 9x13 oven safe dish. Set aside.
Combine oats, baking powder, cinnamon, salt. Stop: prior to adding the berries and chocolate chips, stir the previous ingredients until well combined. Add 1/2 of chopped strawberries (slightly smaller then bite size), 1/2 of blueberries, 1/2 Ghiradelli dark chocolate chips (again, don’t make it harder then it needs to be, if you have semi-sweet Nestle - great!). Don’t worry about squishing the berries a bit. Lay/pour into an even layer in the prepared dish.
Combine almond milk (coconut milk, whole milk, etc…), eggs, honey, vanilla and melted butter / oil. Pour over oats. Shake just a smidge to get it to settle into the oats.
Spread the remaining strawberries, blueberries, Ghiradelli dark chocolate chips on top of oat mixture. Cover with tinfoil and refrigerate overnight.
In the am, preheat oven to 375 degrees. Place bake in oven while preheating, with tinfoil on and set timer for 30 min. Remove tinfoil at 30 min and set for an additional 30 min. Note: total bake time - 1 hour!
