Inga's Cranberry White Chocolate Cookies Recipe

Inga’s (favorite) Cranberry White-Chocolate Cookies

Ingredients

  • 1/2 c. unsalted butter, melted & cooled until slightly warm
  • 1 egg
  • 2 c. flour
  • 1 c. dried cranberries
  • 1/2 c. chopped toasted hazelnuts or pecans (optional)
  • 1/2 tsp. baking soda
  • 1 1/2 c. light brown sugar
  • 2 Tbsp. honey
  • 1 tsp vanilla
  • 1/2 c. oldfashioned oats
  • 1/2 tsp. salt
  • 1/2 tsp cinnamon
  • 3/4 c. white chocolate chips

Instructions

Preheat oven to 350F.

By hand or mixer, blend together butter, brown sugar & honey.

Add egg and vanilla, mix well.

In a large bowl, stir together flour, oats, baking soda, salt and cinnamon; add to butter mixture & mix until combined well.

Stri in white chocolate chips, cranberries & pecans or hazelnuts.

Place dough 2" apart on ungreased baking sheet & bake in the center of the oven until edges are lightly browned & centers are still soft, between 10 & 15min.

Don’t overbake.

Cool completely on wire racks.
