Meringue Recipe
Meringues with chocolate glaze
Ingredients
- 2 1/2 c. sugar
- 3-4 egg whites
- 1/8 c water
- 1c. powdered sugar
- 1 egg white
- some lemon juice
- some cocoa powder
Instructions
Preheat oven to 250F.
Slowly add sugar to boiling water to make a syrup.
In the meantime, mix egg whites into a fluffy porous mass.
Slowly add egg whites to the syrup.
Place the mixture over steam and continue mixing with a mixer until it is completely fluffy and thick.
Remove from steam and continue mixing until the mixture cools down.
Cover a 8x13in backing sheet with wax paper.
Place small meringue forms onto the paper and put the backing sheet in the oven.
Bake for 1h or until the merengues are completely solidified.
Let cool and cover with glaze.
Combine powdered sugar with an egg white until thoroughly mixed.
Add lemon juice and cocoa powder to taste.
