Pumpkin Cake Roll Recipe

PUMPKIN CAKE ROLL

Ingredients

  • 3 eggs
  • 2/3 cup pumpkin
  • 1 cup sugar
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • 3/4 cup flour
  • 2 tbsp butter, softened
  • 8 oz cream cheese, softened
  • 3/4 tsp vanilla
  • 1 cup powdered sugar
  • a few chopped maraschino cherries (optional)

Instructions

Preheat oven to 375 degrees. Grease a 10x15 cookie sheet with sides-line with waxed paper.

Mix together eggs, pumpkin, sugar, baking soda and flour. Pour on cookie sheet. Sprinkle with nuts. Bake for 15 minutes. Turn onto powdered sugared dishtowel. Roll up jelly-roll style (towel and all) and let cool.

Mix together butter, cream cheese, vanilla, cinnamon and powdered sugar. Stir in chopped maraschino cherries, if desired.

Unroll cooled cake and carefully remove waxed paper. Spread filling evenly and roll up again. Refrigerate.

May be sprinkled (dusted) with powdered sugar before serving.
