Acorn Squash or Zucchini Blinchiki ( Samoylov's Recipe)

Squash or Zucchini Blinchiki

Ingredients

  • 1/4 acorn squash (can also do 1-2 zucchini combined with 1/2 butternut squash)
  • 3 apples (honey crisp or gala)
  • 1/4c frying oil (coconut, corn etc)
  • 1 egg
  • 3 tbsp sugar
  • approx. 1c Kodiak cake mix (flour works but not as well)
  • 1/4 tsp. salt

Instructions

Peel the squash with a knife (cut off the peel on a cutting board) and clean out the inside from soft tissue (i.e. seeds and spongy materials). Peel the zucchini (if adding) and peel and core apples.

Grate everything on the largest grate setting, add to a large bowl and mix thoroughly. Drain juice from the bottom of the bowl if there is too much but leave a good bit to mix with the flour.

Add sugar, mix thoroughly and taste to make sure it’s sweet enough. Mix in the egg and then the flour and salt. The mixture should become more solid and viscous but still pretty runny. Add flour as necessary.

On a large frying pan, add oil (so that it covers the entire bottom of the pan) and heat it up to medium-high heat. Spoon batches of mixture into the frying pan and fry on both sides until golden brown (3-5 mins).
