Amazing Pan-Fried Mussels

Ingredients

  • 1 lb/person Fresh Mussels (must be completely closed)

  • 1 small onion, diced

  • 3 cloves garlic

  • 1c white wine

  • 1/2-1c chicken broth

  • 2tbsp butter

  • salt to taste (may already be in chicken broth)

Instructions

In a deep pan, fry the onion with butter until almost done - nicely translucent and soft. Mash garlic into the pan and fry mixture for about 2 min.

Add mussels, wine, chicken broth and salt. Cover and let slowly boil for about 5 mins. Uncover and let the liquid evaporate. The mussels are done when they have completely opened up.

Serve immediately and enjoy!
