Amazing Vegetable Medley

Ingredients

  • 1/2 red onion
  • 1/2 c chopped carrots
  • 5-10 asparagus spears
  • chopped broccoli OR 1/3 green cabbage
  • chopped cauliflower
  • 1 zucchini
  • 1 yellow squash
  • 1/2-1 tsp dried basil
  • 1 1/2 tsp butter
  • 1 1/2 tsp olive oil
  • 1-2 tbsp soy sauce
  • salt
  • pepper

Instructions

  • Chop everything into bite-sized pieces! Add butter with onions, carrots and cabbage (if using) to the pan. Onions turn sweet when fried in butter! Cook under lid for 5 mins.

  • Add asparagus and olive oil, season with basil, salt and pepper to taste. Add broccoli, mix well and cook for another 3-5 mins. Finally add zucchini, squash. Cook everything covered, stirring occasionally, until the veggies are to your preferred doneness. It’s best to leave veggies a big crunchy for tasty texture.
