Bacon and Cabbage

Ingredients

  • 3/4 head cabbage, sliced into ribbons about 3in long
  • 1-1.5 lb. bacon
  • 3/4 tsp. thyme
  • 3/4 tsp. sage
  • salt and pepper
  • 3 cups cooked rice

Instructions

  • Steam cabbage in a vegetable steamer for 15 min. or until done.

  • While cabbage is steaming, fry bacon in a large skillet over medium heat until crispy. Remove bacon to paper towels.

  • Add cooked cabbage to rendered bacon fat in the skillet. Sprinkle with thyme and sage. Cook one minute, stirring.

  • Crumble bacon into cabbage, stir to mix, and serve with salt and pepper.

  • Add 3 cups cooked rice to the skillet during the last few minutes of cooking to create a quick, hearty main dish.
