Bacon and Cabbage
Ingredients
- 3/4 head cabbage, sliced into ribbons about 3in long
- 1-1.5 lb. bacon
- 3/4 tsp. thyme
- 3/4 tsp. sage
- salt and pepper
- 3 cups cooked rice
Instructions
Steam cabbage in a vegetable steamer for 15 min. or until done.
While cabbage is steaming, fry bacon in a large skillet over medium heat until crispy. Remove bacon to paper towels.
Add cooked cabbage to rendered bacon fat in the skillet. Sprinkle with thyme and sage. Cook one minute, stirring.
Crumble bacon into cabbage, stir to mix, and serve with salt and pepper.
Add 3 cups cooked rice to the skillet during the last few minutes of cooking to create a quick, hearty main dish.
