Pork Chops with Mushrooms, Dill, and Sour Cream
Ingredients
- 2 tsp olive oil
- 2 boneless thin cut pork chops
- 1 tbsp butter
- 1/2 sweet yellow onion, diced
- 8 oz of button mushrooms, sliced
- 1 tbsp paprika
- 1 tbsp fresh dill, chopped
- 1/2 cup of sour cream
- Sea salt and freshly cracked pepper, to taste
- Noodles, rice or potatoes, cooked
Instructions
Add the butter, onions and mushrooms to a skillet. Cook until almost ready (5-10 mins), then add the rest of the spices and cook until done.
Meanwhile, preheat the oven to 400F and set out a baking sheet covered with aluminum foil. Grease the foil with oil, rinse off the pork chops, season with salt, pepper and dill and place them on the sheet.
When the frying is done, take the mixture off the stove and mix in sour cream. Stir to combine, then ladel on top of the pork chops. Cover pork chops with another piece of aluminum foil and place in the oven. Bake for 10 mins, then remove the foil and bake for another 8-10 mins. Use a temp probe to make sure the pork chops reach at least 160F. Do not overcook!
Pull out the pork chops and let them rest (preferably under aluminum foil).
