Chicken Tikka Masala Eric's Recipe
Eric’s recipe(quite good)
Ingredients
- 1 cup yogurt
- 1 tbl lemon juice
- 2 tea ground cumin
- 1 tea ground cinnamon
- 1/2 tea cayenne pepper (chilli substitute)
- 1 tea minced fresh ginger
- 1 tea freshly ground black pepper
- 1 tea salt or to taste
- 3 boneless skinless chicken breasts, cut into bite-size pieces
- 4 long skewers
- 1 tbl butter
- 1 clove garlic, minced
- 2 tea ground cumin
- 2 tea paprika
- 1 (8 ounce) can tomato sauce
- 1 cup heavy cream
Instructions
In large bowl combine:
- 1 cup yoghurt
- 1 Tbl lemon juice
- 2 tea ground cumin
- 1 tea ground cinnamon
- 1/2 tea chilli/cayenne pepper
- 1 tea ground black pepper
- 1 Tbl minced ginger
- 1/2 tea salt
Add chicken(3 boneless chicken breasts cut into bite sized pieces), cover marinate in refrigerator for 1 hour.
Preheat grill for high heat. Lightly oil the grill. Grill until juices run clear(5 minutes on each side). Alternatively use skewers.
Melt 1 Tbl butter in large heavy skillet over medium heat. Saute garlic for 1 minute. Season with:
- 2 tea cumin
- 2 tea paprika
- 1/2 tea salt
Stir in:
- 8 oz can tomato sauce
- 1 cup heavy cream
Simmer on low heat (position 4) until sauce thickens(about 20 min). Add grilled chicken and simmer for 10 minutes. Garnish with fresh cilantro if desired.
