Deep-Dish Pepperoni Pizza

Ingredients

  • 3 Tbsp. Olive Oil
  • 8 oz. pizza dough at room temperature
  • 1/2 lb mozzarella, grated (2 cups)
  • 14.5 oz. can diced tomatoes, drained
  • 1/2 pepper, sliced (optional)
  • 1/2 tsp. dried oregano
  • 1/4 small red onion, thinly sliced
  • 1/4 cup kalamata olives, pitted
  • 4 mushroom, thinly sliced
  • 1 oz. sliced pepperoni
  • salt & black pepper

Instructions

  • Heat oven to 400F.

  • Coat a 9-inch oven-proof skillet or cake pan with 1 1/2 Tbsp. of the oil.

  • Press the dough into the pan, covering the bottom and sides.

  • Top with half the mozzarella, then the tomatoes, oregano, and remaining mozzarella.

  • In a small bowl, toss the onion, olives, mushrooms, and pepperoni with 1/2 Tbsp. of the remaining oil; scatter over the pizza.

  • Bake until the crust is golden brown, 30-35 mins.
