Frank Vetesi Chicken Paprikash Recipe

Chicken Paprikash

Ingredients

  • 12 chicken wings
  • 2 fresh sweet red peppers (do NOT get green peppers)
  • 1 1/2 Tbsp paprika (hungarian)
  • 3/4 large spanish or vidalia onion (size of softball)
  • 1 lb fresh carrots
  • 1 can of Hunts tomato paste (not sauce) (approx. 8oz? 3" tall)
  • Freshly ground black pepper to taste
  • 1 Tbsp garlic powder (or to taste)
  • 4 Tbsp sour cream

Instructions

  • De-skin the chicken, put in a large pot or dutch oven. Pot MUST have a lid.

  • Quarter the onion, cut carrots to about 1" length, slice up red peppers into small pieces.

  • Throw ingredients above into the large pot, add tomato paste on top. Add 1/3 can-full of water. Sprinkle on top black pepper, garlic and paprika.

  • Preheat oven to 375 deg. (make sure the oven can fit the pot).

  • Wash your hands, mix everything in the pot thoroughly so that everything is well-coated. Once done, cover with lid and place in the oven.

  • At 50min mark, take out the pot, put gloves on, mix everything around again. At 1h 15m give it another quick mix.

  • Cook for a total of 1h 45m.

  • After everything is done, mix in sour cream.

  • Next day, spoon off the fat from the top.
