Hash Brown Egg Bake

Ingredients

  • Frozen hash browns - I used O’Briens - 1 lb,12 oz package
  • 1 1/2c Fresh mushrooms (or canned)
  • 1/2c diced onions
  • 1/2 medium zucchini
  • 10-12 eggs
  • 1c milk
  • 2c shredded cheese
  • 1 tsp salt
  • pepper to taste
  • 1/2 lb. polska kielbasa or similar
  • 1Tbsp butter
  • 1/4c shredded carrots

Instructions

  • Preheat oven to 350F.

  • In a pan, add butter and saute mushrooms, onions, and carrots.

  • Add kielbasa chunks half-way through and cook everything together for a bit.

  • Then add potatoes and keep sauteeing for another 5 mins or longer to let the flavors mix together.

  • Meanwhile, cut up the zucchini into little chunks and set aside.

  • Take the mixture off the stove, add zucchini and mix well.

  • In a bowl, whisk together eggs, salt, pepper and milk.

  • Add all of the cheese and mix together well.

  • Grease a glass 9 x 13" or 8 x 11" pan.

  • Place all the solid ingredients in the pan and pour liquid ingredients on top.

  • Somewhat mix the resulting mixture to let the liquid permeate.

  • Bake uncovered at 350 for 1 hour (perhaps a little longer if you keep it in the fridge for a while).

  • Let it set for 5 - 10 minutes before cutting in squares.
