Ikra - Ukrainian Baked Eggplant Dish

Ingredients

  • 2 large eggplants
  • tomatoes with a weight ratio of 1:2 with eggplant
  • 1 small onion
  • 4 garlic cloves
  • salt
  • corn oil

Instructions

  • Wash eggplants and pierce with a knife.

  • Place into oven @ 400F (or less if they start burning) and bake approximately 30min or until eggplant is soft.

  • Cut eggplants in half and peel the skin, then cut into small pieces.

  • Cut tomatoes into similar-sized pieces.

  • Cut onion into small pieces.

  • Mix eggplants, tomatoes and onions together.

  • Add salt and corn oil to taste.
