Ikra - Ukrainian Baked Eggplant Dish
Ingredients
- 2 large eggplants
- tomatoes with a weight ratio of 1:2 with eggplant
- 1 small onion
- 4 garlic cloves
- salt
- corn oil
Instructions
Wash eggplants and pierce with a knife.
Place into oven @ 400F (or less if they start burning) and bake approximately 30min or until eggplant is soft.
Cut eggplants in half and peel the skin, then cut into small pieces.
Cut tomatoes into similar-sized pieces.
Cut onion into small pieces.
Mix eggplants, tomatoes and onions together.
Add salt and corn oil to taste.
