Parsleyed Roasted Red Potatoes Recipe

Roasted Red Potatoes and Shallots

Ingredients

  • 1 1/2 lbs. small red potatoes (large ones may work as well)
  • 6 shallots
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbs. (or slightly less) dried Italian seasoning
  • 2 Tbs. chopped fresh parsley
  • 2-3 Tbs. olive oil

Instructions

Halve the potatoes. Leave the skin on. If using large red potatoes, cut them into quarters.

Quarter the shallots. Add potatoes and shallots to a large bowl for tossing with spices.

Add oil, salt, pepper, and seasoning to the bowl and toss the mix (alternatively use a large spoon to mix thoroughly).

Preheat oven to 375deg F. Spread the potatoes and shallots in a single layer in a baking pan (9x13in works well).

Leave the container open, place into the oven and stir every 15min until done (approx. 35min total).

When finished, sprinkle with parsley and serve.
