Pelmeni

Ingredients

  • 2 1/2 cups flour (I bought bleached enriched all purpose flower at Kroger and something similar at Publix, the first one worked much better)
  • 2 tablespoons of oil (olive or sunflower)
  • salt
  • black pepper
  • 1 onion
  • 4-5 tbsp milk
  • 1/2lb ground beef
  • 1/2lb ground pork
  • butter

Instructions

Filling:

  • Mix both meats (1 lb total) - 1/2 lb or each
  • Add one onion (diced extremely finely)
  • Add pepper and salt to taste, a little less than a tsp salt - maybe one tsp
  • Add 4-5 Tbsp milk
  • Mix everything really well

Dough:

  • Add 2 1/2 cups flour (two orange mugs)
  • Add one tsp salt
  • Add two Tbsp oil
  • Pour 1 1/4 cup (or one orange mug) boiled water - still very hot – not all at once, pour a little and mix
  • Roll out dough on flour, shape pelmeni, put on plate sprinkled with flour.
  • Freeze or boil. For cooking, put in boiling water, wait til they float to top, boil for five minutes after that. Add butter immediately to hot pelmeni.
