Potato Hash Browns Diruny

Potato Diruny (Latkies / Hash Browns)

Ingredients

  • 2 cups freshly shredded potatoes (Cub Foods sells them in the cold section)
  • 1-2 eggs
  • 1/4c - 1/2c flour
  • Salt and freshly cracked pepper, to taste OR Greek seasoning works really well
  • 1/4c shredded cheese (for topping)
  • Ketchup (optional)
  • 2 Tbsp butter

Instructions

  • Add potatoes and eggs to a large bowl. Mix well.
  • The mixture will be a bit runny so add just enough flour where the mixture becomes somewhat sticky so it can be spooned onto a pan.
  • Add seasonings and mix again.
  • Heat butter in a large frying pan.
  • Spoon 1-2 spoonfuls of mixture onto a frying pan and pat them with a fork or other utensil so they form thin pancakes.
  • Fry until just golden brown on each side (about 3 mins), then take off the stove and top with shredded cheese.
  • Serve with ketchup.
