Pulled Chicken Tacos (Crockpot)
Ingredients
- 1 tablespoon olive oil
- 1/2 medium onion
- 2lb bone-in chicken (breasts and / or thighs work best, skin is fine)
- 1/2 pack chicken fajita seasoning
- 1/4 cup water
- 2c cooked rice
- salt
For Serving (optional)
- 10-12 flour tortillas
- Lettuce finely chopped
- Shredded Mexican cheese blend or cheddar cheese
- Tomatoes chopped
- Sour cream
- Ripe avocados
Instructions
- Chop the onion and add it in a single layer to the bottom of the crockpot. Add a little water to the bottom to prevent sticking and sprinkle the oil on top.
- Wash and clean the chicken. Season on both sides with seasoning and salt.
- Place tightly in one layer (if possible) in the crockpot.
- Cook on high for 3 1/2 hours and then another 1-2 hrs. on low.
- Remove all bones and shred with forks.
- Serve wrapped in tortillas with lettuce, tomatoes, cheese, sour cream or your other desired toppings.
