Pulled Chicken Tacos (Crockpot)

Ingredients

  • 1 tablespoon olive oil
  • 1/2 medium onion
  • 2lb bone-in chicken (breasts and / or thighs work best, skin is fine)
  • 1/2 pack chicken fajita seasoning
  • 1/4 cup water
  • 2c cooked rice
  • salt

For Serving (optional)

  • 10-12 flour tortillas
  • Lettuce finely chopped
  • Shredded Mexican cheese blend or cheddar cheese
  • Tomatoes chopped
  • Sour cream
  • Ripe avocados

Instructions

  • Chop the onion and add it in a single layer to the bottom of the crockpot. Add a little water to the bottom to prevent sticking and sprinkle the oil on top.
  • Wash and clean the chicken. Season on both sides with seasoning and salt.
  • Place tightly in one layer (if possible) in the crockpot.
  • Cook on high for 3 1/2 hours and then another 1-2 hrs. on low.
  • Remove all bones and shred with forks.
  • Serve wrapped in tortillas with lettuce, tomatoes, cheese, sour cream or your other desired toppings.
