Rumble-de-thumps
Ingredients
- 7-8 potatoes
- 2 cups sliced cabbage
- 1/2 cup chopped onions
- 1/3 stick butter
- Whipped cream or milk
- Grated N.Y. cheddar cheese
Instructions
Peel potatoes and cut into pieces, then cover with water. Boil until soft and pour off the water. Add 1/3 stick of butter, salt, and pepper to taste. Mash the potatoes until smooth, adding a little whipped cream (or milk) to make medium creamed potatoes.
In another pot, combine 2 cups of sliced cabbage and 1/2 cup of chopped onions. Boil for 10 minutes or until tender, then pour off the liquid.
In a greased pan (or oven-proof bowl), put a layer of creamed potatoes.
Put the cooked cabbage on top of the potato layer. Sprinkle grated N.Y. cheddar cheese over the cabbage.
Add the rest of the potatoes on top, and sprinkle with cheese.
Preheat the oven to 350°F (175°C). Bake until lightly browned, approximately 20-30 minutes.
