Samoylov’s Grilled Ribs

Ingredients

  • 5 medium onions

  • 2-3 tomatoes

  • ~4lb pork baby back ribs (two packs) - don’t recall exactly what kind of ribs but at Publix they were the more expensive of the two kinds

  • salt

  • pepper

  • Moore’s Hickory Original Marinade (sold @ Publix, see pics). Get a similar marinade elsewhere that contains: soy sauce, vinegar, salt, dehydrated garlic, citric acid (or can also use Sweet Baby Ray’s bbq sauce)

  • Vegetable Oil (not olive!)

Instructions

Prepare the marinade by placing onions, tomatoes, some salt, pepper and marinade sauce / bbq sauce into a blender and mixing well (but still leave a bit chunky).

Thoroughly wash the ribs and cut them into 2-rib pieces (some single ribs may be left over after all the cutting is done, that’s ok).

Place ribs in layers into a large pot, covering layer with the marinade. Cover with lid and put in the refrigerator for 12-24h.

Before ribs are going to be placed on the grill, sprinkle each rib individually with vegetable oil (I do this by draining the marinade, then pouring oil onto ribs in the pot and making sure each one is covered). This seals in moisture while the ribs are cooking on the grill.

Preheat the grill to 500F+ and place ribs directly on the rack.

Cook approx. 5mins on one side, then flip.

Continue monitoring ribs as they will start dripping fat that will catch on fire.

Make sure ribs do not burn.

Continue flipping until nicely done and internal temperature is 170-190F (approx. 15mins).
