Tilapia with Asian Rice

Ingredients

  • 1 lb. Tilapia fillets
  • 1/4 cup teriyaki sauce
  • 3/4 cup uncooked rice (makes about 2c. cooked rice)
  • 1 red pepper
  • 1 large broccoli floret
  • 2 tbsp. sesame seeds
  • 2 scallions
  • 1/2-1 tbsp. sesame oil
  • 1 tbsp. butter

Instructions

Line a baking sheet with rims with aluminum foil.

Place tilapia fillets on the foil and baste with either teriyaki or the combo sauce.

Broil for 7-9 mins. in the oven, basting as necessary.

Best way to make the rice is in a rice cooker.

Cut up pepper into strips and broccoli into chunks/florets.

Place the rice on the bottom, add the amount of water per rice cooker instructions and place pepper and broccoli into a steaming basket on top.

Watch the veggies until they are almost done, then take them off steam.

While rice and veggies are cooking, cut up green onions into small round pieces.

Once rice is done, place it in a large pan.

Cut up the veggies into small pieces and add to the pan, along with sesame seeds, sesame oil and butter.

Salt to taste and cook for a few minutes, mixing until the veggies are done and everything is well mixed.

Add green onions and mix again.

Serve immediately with cooked tilapia fillets mixed into the rice.
