Turkey Tetrazzini
Ingredients
- 8 oz pkg thin spaghetti
- 2 cup shredded cooked turkey
- 2 1/2 Tbsp butter
- 2 (4 oz) cans sliced mushrooms
- 1 onion, chopped
- 1 3/4 cup shredded Cheddar cheese
- 2 cup half-and-half (fat free)
- 1 (2 oz jar) diced pimentos, drained
- 1 (4 oz) can chopped green chillies
- 1 tsp salt
- 1/2 tsp pepper
- 7 asparagus spears (optional)
- 1 cup herb stuffing mix, crushed (optional)
Instructions
Cook spaghetti according to instructions and drain.
Place in a dutch oven (or baking dish if it fits) and stir in turkey.
Melt butter in large skillet.
Add onions and mushrooms (also add asparagus if you bought it) and cook until onions are translucent.
Add cheese, half and half, pimentos and/or olives, chillies, salt and pepper.
Cook stirring, until thoroughly heated and pour into baking dish.
Top with stuffing mix, if using.
Bake uncovered at 350F for 30 minutes.
