Turkey Tetrazzini

Ingredients

  • 8 oz pkg thin spaghetti
  • 2 cup shredded cooked turkey
  • 2 1/2 Tbsp butter
  • 2 (4 oz) cans sliced mushrooms
  • 1 onion, chopped
  • 1 3/4 cup shredded Cheddar cheese
  • 2 cup half-and-half (fat free)
  • 1 (2 oz jar) diced pimentos, drained
  • 1 (4 oz) can chopped green chillies
  • 1 tsp salt
  • 1/2 tsp pepper
  • 7 asparagus spears (optional)
  • 1 cup herb stuffing mix, crushed (optional)

Instructions

  • Cook spaghetti according to instructions and drain.

  • Place in a dutch oven (or baking dish if it fits) and stir in turkey.

  • Melt butter in large skillet.

  • Add onions and mushrooms (also add asparagus if you bought it) and cook until onions are translucent.

  • Add cheese, half and half, pimentos and/or olives, chillies, salt and pepper.

  • Cook stirring, until thoroughly heated and pour into baking dish.

  • Top with stuffing mix, if using.

  • Bake uncovered at 350F for 30 minutes.
