Wild Rice Chicken Casserole
Ingredients
- 1 1/2 cup Wild Rice
- 5 chicken breasts
- 1 cup cream of chicken (or cream of mushroom) condensed soup
- 1/2 cup light sour cream
- 14oz. can of sliced mushrooms
- salt & pepper to taste
Instructions
- Cook wild rice in 3 1/2 cups of water, boiling gently for 60min or until all the water evaporates.
- In a 12x8in pan, spread the wild rice evenly on the bottom.
- Layer chicken breasts on top in a single layer.
- Preheat the oven to 350 deg.
- Mix sour cream, cream of chicken soup and mushrooms together.
- Apply on top of the chicken evenly.
- Cover with aluminum foil and bake for 45 mins.
