Wild Rice Chicken Casserole

Ingredients

  • 1 1/2 cup Wild Rice
  • 5 chicken breasts
  • 1 cup cream of chicken (or cream of mushroom) condensed soup
  • 1/2 cup light sour cream
  • 14oz. can of sliced mushrooms
  • salt & pepper to taste

Instructions

  • Cook wild rice in 3 1/2 cups of water, boiling gently for 60min or until all the water evaporates.
  • In a 12x8in pan, spread the wild rice evenly on the bottom.
  • Layer chicken breasts on top in a single layer.
  • Preheat the oven to 350 deg.
  • Mix sour cream, cream of chicken soup and mushrooms together.
  • Apply on top of the chicken evenly.
  • Cover with aluminum foil and bake for 45 mins.
