Zinas Liver Cake

Ingredients

  • 3/4 lb liver (beef is best), finely ground
  • 4-5 onions
  • 6 eggs
  • 1/2 tsp salt
  • 2 Tbsp butter
  • 5oz mayonaise
  • pepper to taste
  • 2 Tbsp flour
  • 1/4 cup milk (more or less, depending on how it mixes with flour)

Instructions

  • Cut onions into half-rounds and fry up with butter until well done.

  • Mix flour with milk to make a fairly liquid mixture.

  • Mix together eggs, salt, pepper, liver and flour+milk mixture.

  • Fry in a frying pan just like you were frying blini.

  • Make a cake in layers like so:

  1. blin (on the bottom)
  2. fried onion
  3. thinly cover with mayo
  • Repeat x5 but use up all the ingredients before the last blin (so it sits on top)
