Cobb Salad Recipe

Cobb Salad

Ingredients

  • 1 oz. Blue cheese (or other)

  • 1/4 cup nonfat Greek yogurt

  • 1 Tbsp. red wine vinegar

  • 1 Tbsp. water

  • 1/8 tsp. ground black pepper

  • 1 pack turkey bacon

  • 4-8 cups of spinach (or romaine lettuce)

  • 1 lb. poached or grilled chicken breast (optional)

  • 2 cups cherry tomatoes (halved)

  • 3 hard-boiled eggs, peeled and quartered

  • 1 firm, ripe avocado, thinly sliced

Instructions

  • Cook the turkey bacon.

  • In the meantime mix cheese, yogurt, vinegar, water and pepper together.

  • Mix all ingredients together and drizzle with dressing.

  • Enjoy.
