Ingredients

  • 3 beets
  • 2 carrots
  • 2 potatoes
  • 10oz canned peas
  • 6-8 spears dill pickles (or enough to make the salad salty)
  • 1/2 medium onion (finely chopped)
  • 2-3tbsp. vegetable oil

Instructions

  • Boil beets, carrots and potatoes until done (beets approx. 30-40min, potatoes & carrots 15-20min).
  • Peel beets, potatoes and carrots.
  • Chop everything into small cubes and mix together.
  • Serve.
