Samoylovs’ Seafood Salad
Ingredients
- 5-6 eggs
- 1 can crab meat (220g net weight)
- 1 can shrimp meat (220g net weight)
- 1/4 onion (average size)
- 3 Tbsp. mayonnaise (we split 1/2-1/2 between regular and light)
- 1 tsp. salt
- bread or crackers to serve on
Instructions
Boil eggs for 10 mins in a pot.
Meanwhile, open crab and shrimp cans, thoroughly drain juices (drain some juice into a cup for adding to salad later) and place in a container (plastic tupperware works).
Chop onion into small pieces. For better taste, place in a cup and poor boiling water over it.
Let the onion sit in hot water while the eggs are cooking. After 5-10mins drain onions and add to the container with seafood.
Once the eggs are done, fill the pot with cold water and let them cool for 5-10 mins. Peel and chop into small (roughly cube-shaped) pieces. Add to the container.
Mix everything well together, then add 3 Tbsp. of mayonnaise and continue mixing. If the mixture is a bit dry, add some of the seafood juice that was drained earlier (be careful not to overdo).
If the mixture is still dry, add more mayo until the ingredients are well coated but not overcoated with mayo (judge by your own taste).
Mix in 1-2 tsp. of salt (or to taste).
Serve on bread or crackers.
