Baked Leek Pastries
Ingredients
- 1 bunch of fresh leek
- 1 pack of Phyllo dough
- (2 tbsp. + 2tbsp.) Extra Light Olive Oil
- 1lb feta cheese
- 4 eggs
- 200g yogurt
- 1/3 tsp. baking soda
Instructions
Day before: Place phyllo dough pack into the refrigerator to thaw slowly.
Thoroughly clean leek and chop into 1/2" x 1/2" slices. It is best to cut leek lengthwise first and then chop into pieces. Take care to clean leaves thoroughly as they may contain large amounts of dirt.
In a pan, pour 2tbsp oil, add leek and cook until wilted (approx. 10-15min)
Once the leek has cooled down, add crumbled feta cheese, mix thoroughly, add eggs and mix again.
Add yogurt to a container and mix in baking soda. The mixture will rise. Add to leek mixture. Mix well again until all ingredients are blended.
Preheat oven to 400F.
Cover a 13x8in pan with aluminum foil. Spread 2-3tbsp. oil over the foil. Unroll dough into dough sheets. Place three sheets of dough on top of each other and spread 2-3 tbsp. of leek mixture on top of the dough. Roll up the dough and put onto the pan.
Using olive oil, baste each roll and make sure to cover all of the dough so it doesn’t burn.
Bake in the oven for 40min.
After pulling out the pastries, wet your hands with cold water and spray the pastries lightly with water. Cover with a towel for 3-5 mins. Take the rolls off the pan so they don’t continue cooking. Using a knife, cut the rolls with a knife in half.
