Zina's Eggplant Mushrooms

Zina’s Eggplant “mushrooms”

Ingredients

  • 2 eggplants

  • 2 green onions

  • 1/2 onion

  • 2 Tbsp sour cream

  • corn oil (for frying)

  • salt & pepper to taste

  • Brine - 2 Tbsp salt for 4 cups

Instructions

  • Peel eggplants, cut into cubes and soak in the salty brine for 20-30 mins.

  • Lightly fry the onions in a pan then add eggplant.

  • Fry until everything is cooked but eggplant is still pretty firm.

  • Add sour cream, salt and pepper to taste.

  • Enjoy!
