Zina's Eggplant Mushrooms
Zina’s Eggplant “mushrooms”
Ingredients
2 eggplants
2 green onions
1/2 onion
2 Tbsp sour cream
corn oil (for frying)
salt & pepper to taste
Brine - 2 Tbsp salt for 4 cups
Instructions
Peel eggplants, cut into cubes and soak in the salty brine for 20-30 mins.
Lightly fry the onions in a pan then add eggplant.
Fry until everything is cooked but eggplant is still pretty firm.
Add sour cream, salt and pepper to taste.
