Zina’s Eggplant sidedish

Ingredients

  • 2 eggplants

  • 1 celery stalk

  • 1 green garlic sprout or 2 garlic cloves

  • 2-3 Tbsp corn oil

  • 2 Tbsp vinegar

  • 1 tsp salt

  • 1 tsp sugar

Instructions

  • Boil a large pot of water and place eggplants in it.

  • Boil for 8-10 mins then pull them out and place under heavy weight for 30-60 mins.

  • Cut them up into small cubes.

  • Cut up celery and garlic into tiny pieces, add all ingredients together and mix thoroughly.

  • Enjoy!
