Smoked Pork Chops

Ingredients

  • 3-4lb pork chops
  • pork chop / rib rub (Memphis Dust is excellent – see recipe)
  • 1.5c apple juice
  • 1/2c brown sugar
  • salt

Instructions

Wash and dry pork chops with a paper towel. Apply good amounts of dry rub and let rest overnight in the fridge.

Place pork chops in a 1gal ziplock bag and add apple juice, brown sugar and salt. Let them brine for 1.5-2hr

Preheat the smoker to 225F. Place on the rack and make sure to cook only to 145F internally (use a probe!). Do NOT overcook! The process will take 60-90min for thick pork chops.
