Barley Mushroom Chicken Soup

Ingredients

  • 1/2-3/4 cup barley
  • 1/2 cup lima beans
  • 8 cups water
  • 5 chicken drumsticks (or equiv.)
  • 1 medium onion
  • 1 cup green beans (fresh or frozen)
  • 4oz mushrooms (sliced)
  • 3/4-1 cup broccoli
  • salt
  • pepper
  • paprika
  • additionally can add green/red peppers and zuccini/squash

Instructions

  • In a large pot boil chicken for 5 mins, pour off the water, take out the chicken and clean under running water. Set aside.
  • Clean pot and lid as well, pour 8c. water into it and bring to a boil.
  • Add barley and lima beans, turn heat to low, cover tightly and simmer for 10-15 mins.
  • Then add chicken back to the pot along with the whole onion.
  • Boil for an additional 30 mins.
  • Remove the onion and toss it, then add broccoli, green beans and mushrooms, salt, pepper and paprika to taste.
  • Boil for an additional 20 mins or until barley is done.
