Chicken Veggie Soup

Ingredients

  • 4 chicken drumsticks or equivalent amount of chicken wings

  • 2 potatoes

  • 1 mid-to-large onion

  • 1 bouillon cube

  • 4-5 leaves of cabbage

  • 2 large carrots (or baby carrots equivalent)

  • 1 green pepper

  • 1/2 lb frozen baby green peas

  • Salt to taste

  • 1 squash (optional)

  • 1 zucchini (optional)

  • 1/3 eggplant (optional)

  • Frozen veggie mix (to taste, optional)

  • Dill (recommended) or parsley (optional)

Instructions

  • In a large pot, boil chicken for 5 minutes.

  • Pour off the water, take out the chicken and clean under running water. Clean pot and lid.

  • Pour clean water back into pot, place chicken and onion in the pot, boil for 10 minutes.

  • In the meantime, clean and cut veggies. Chop potatoes into pieces, slice carrots into rounds, green peppers into slices. Tear and clean 4-5 leaves from cabbage, etc.

  • After 10 minutes, add potatoes, bouillon cube, and salt. Boil for another 10 minutes.

  • Add all fresh veggies, boil for 7 minutes.

  • Add frozen veggies, boil for 5-7 minutes.

  • Add dill/parsley, boil for 2 minutes.

  • Serve.
