French Market Bean Soup

Ingredients

  • 1/4 cup dried black beans

  • 1/4 cup garbanzo beans

  • 1/4 cup dried black-eyed peas

  • 1/4 cup dried kidney beans

  • 1/4 cup dried pinto bean

  • 1/4 cup dried navy beans

  • 1/4 cup dried lentils

  • 1/4 cup split peas

  • 1/4 cup lima beans

  • 1 medium onion

  • 1 chili pepper

  • 1 ham hock (we used pre-cooked turkey ham)

  • 1 can whole tomato (16 oz.), undrained, coarsely chopped

  • 1/2 tsp black pepper

  • 2 bay leaves

  • Optional: green beans (frozen of fresh), broccoli

Instructions

Wash beans, place in a dutch oven, cover with water 2in above beans and soak overnight.

Drain beans, add 2 cups of water, salt and pepper.

Cover and bring to boil.

Reduce heat and simmer for 1h or until beans are tender.

Approx. 30min into cooking, cut up the ham into bite-sized pieces and add to the soup.

After 1h add all remaining ingredients and simmer for another 30min.
