Samoylovs’ Pork and Bean Soup

Ingredients

  • 1 lb. pork shoulder (buy pre-cut into stripes from store)
  • 1/4 onion
  • 1/2 carrot (grated)
  • 1 cup great northern beans (dried)
  • 1 cup broccoli
  • 1 cup cauliflower
  • 6 cups water
  • 1 Tbsp. olive oil
  • 1-2 mushrooms (optional)
  • salt

Instructions

The night before, soak beans in a container. They will soak up the water and become large.

Bring a large pot of water to a boil with pork in it. Pour out the water and wash the pork.

Cut the pork into 1 in. slices and add back to the pot.

Add 6 cups of water to the same pot. Boil for 1 1/2 hours or until the beans mostly disintegrate.

In the meantime chop the onion into small pieces and fry in a pan with oil. Once onion becomes translucent (~ 5min.) add grated carrot and mushrooms (optional). Fry together until everything is well-done.

Also cut up broccoli and cauliflower into small (1-2cm) pieces. Once the beans have disintegrated, add everything else to the pot and salt to taste.

Bring to a boil and boil for 2-3 min.
