Solyanka

Ingredients

  • 2 chicken breasts

  • 2 pork medallions (like boneless pork chops)

  • 0.7lb Cracker Barrel Sliced Smoked Ham (or similar)

  • 1 small onion

  • 1 large potato

  • 4 pickle spears (quarters)

  • sliced olives to taste

  • 3 ounces tomato paste

  • 2 Tbsp vegetable oil (or to taste)

Instructions

  • Dice the onion finely. Add oil and onion to a pan and fry until translucent (~3 mins).

  • Fill a pot with water and bring to a boil. Add pork and chicken for approximately 5 mins (to get rid of the gunk).

  • Dice all meat very finely (including ham).

  • Add meat to onion on the pan and cook for 5 mins. Add tomato paste and cook 10 more minutes.

  • Dice the potato finely. In a large pot, bring 6-8 cups to a boil and add all everything except olives and pickles.

  • Boil for 15 minutes or until potatoes and meat are done. Add pickles and olives, boil for 3 min and turn off the stove.
