The Best Healthy Turkey Chili
Ingredients
2 tsps olive oil
1/2 - 1 sweet onion, chopped
3 garlic cloves, minced
1 medium red bell pepper, chopped
1/2 pound extra lean ground turkey or chicken
1/2 pound extra lean beef
1 tsp ground cumin
1 tsp sugar (to cut the acidity)
1/2 tsp dried oregano
1/2 tsp salt, plus more to taste
1 (28-ounce) can diced or crushed tomatoes
1 1/4 cups chicken broth
2 (15 oz) cans dark red kidney beans, rinsed and drained
1 (15 oz) can sweet corn, rinsed and drained
1 cup sour cream
optional: 1tsp chili powder + cayenne pepper
Instructions
Heat oil in a large pot over medium-high heat. Add onion, garlic, and bell pepper, saute for 5-7 minutes.
Add ground meat, breaking it apart, and cook until no longer pink.
Stir in chili powder, cumin, oregano, cayenne pepper, and salt for about 20 seconds.
Transfer everything to a slow cooker (or keep in a deep frying pan)
Add the rest of the ingredients. Set for a 4hr slow cooking cycle OR if preparing stove-top, bring to a boil, reduce heat, and simmer for 30-45 minutes until thickened. Adjust seasoning as needed.
Garnish with toppings like cheese, avocado, and tortilla chips.
Serve with a dollop of sour cream to cut the acidity!
