Three-Bean Vegetarian Chili

Ingredients

  • 1 cup organic vegetable broth

  • 1/2 cup chopped onion

  • 1 teaspoon chili powder

  • 1 teaspoon ground cumin

  • 1 teaspoon Worcestershire sauce

  • 1/4 teaspoon salt

  • 1 garlic clove, minced

  • (15-ounce) can no-salt-added black beans, rinsed and drained

  • (14.5-ounce) can diced tomatoes, undrained

  • (7.5-ounce) can no-salt-added pinto beans, rinsed and drained

  • (7.5-ounce) can no-salt-added kidney beans, rinsed and drained

  • 1/4 cup reduced-fat sour cream

  • 1 ounce shredded Monterey Jack cheese with jalapeƱo peppers (about 1/2 cup)

  • 1/8 cup chopped fresh cilantro

Instructions

  • Combine first 12 ingredients in a 6-quart electric slow cooker. Cover and cook on LOW for 8 hours.

  • Ladle soup into bowls; top with sour cream, cheese, and cilantro.
