Three Bean Vegetarian Chili ( Crock Pot) Recipe
Three-Bean Vegetarian Chili
Ingredients
1 cup organic vegetable broth
1/2 cup chopped onion
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1 garlic clove, minced
(15-ounce) can no-salt-added black beans, rinsed and drained
(14.5-ounce) can diced tomatoes, undrained
(7.5-ounce) can no-salt-added pinto beans, rinsed and drained
(7.5-ounce) can no-salt-added kidney beans, rinsed and drained
1/4 cup reduced-fat sour cream
1 ounce shredded Monterey Jack cheese with jalapeƱo peppers (about 1/2 cup)
1/8 cup chopped fresh cilantro
Instructions
Combine first 12 ingredients in a 6-quart electric slow cooker. Cover and cook on LOW for 8 hours.
Ladle soup into bowls; top with sour cream, cheese, and cilantro.
