Tortellini Soup
Ingredients
3x 14.5 oz cans chicken broth (or make your own from bouillon cubes)
20 oz. Tortellini pasta - refrigerated (three cheese, mixed cheese or chicken works well)
14.5 oz can diced tomatoes with liquid
4 scallions (chopped)
2 cloves garlic (minced)
1 Tbsp. dried basil
10 oz. bag of fresh spinach
1 lb. Polska kielbasa
Shaved parmesan for serving
Instructions
Cut up the kielbasa into rounds and fry it up on a frying pan until nicely brown (not burnt) on both sides.
Meanwhile, in a dutch oven (or a large pot) bring broth to a boil.
Add all ingredients except spinach and parmesan to the dutch oven.
Cook Tortellini according to directions.
Turn the heat off when pasta is done, then stir in fresh spinach.
Serve with shaved parmesan on top.
