Sous Vide Perfect Pork Chops

Ingredients

  • thick pork chops

  • rosemary or thyme

  • 1 garlic clove

  • 2 shallots thinly sliced (or dehydrated onion flakes)

  • 1/2 tsp brown sugar

  • 2 tbsp olive oil

  • black pepper

  • salt

  • 1 tbsp butter (for finishing in a pan)

  • 4 cups water

  • 1/4 cup kosher salt or 2 tablespoons table salt

  • 2 tablespoons brown sugar

Instructions

In a container large enough to hold the pork chops, dissolve the salt and sugar, then submerge the chops. Brine the chops in the refrigerator for at least 1 hour, preferably 4 to 8 hours.

Add pork chops to sous vide bag with spices to your liking (you can use a rub if desired). Cook at 140F for 2h.

When sous vide is done, pull out the pork chops, dry out and add salt and pepper on both sides. Preheat a skillet to high heat and melt the butter. Add the pork chops and sear both sides, about 1-2min each.

Server immediately.
