Shredded Carrot Salad

Ingredients

  • 7 large carrots
  • 1/2 bunch flat leaf parsley
  • Juice of 2 lemons
  • 2-3 soup spoons of olive oil
  • 1-2 coffee spoons of sugar
  • Salt, to taste
  • Freshly ground pepper, to taste
  • Dijon mustard (optional)

Instructions

  • Peel and grate the carrots into fine shreds.

  • Chop the flat leaf parsley coarsely.

  • Make a dressing by mixing together the lemon juice, olive oil, sugar, salt, pepper, and Dijon mustard (if using).

  • Toss the dressing with the carrots really well, then taste.

  • Serve the carrot salad shortly after mixing.

  • To make in advance, prepare the carrots and dressing separately, and mix together as close to serving time as possible.
