Shredded Carrot Salad
Ingredients
- 7 large carrots
- 1/2 bunch flat leaf parsley
- Juice of 2 lemons
- 2-3 soup spoons of olive oil
- 1-2 coffee spoons of sugar
- Salt, to taste
- Freshly ground pepper, to taste
- Dijon mustard (optional)
Instructions
Peel and grate the carrots into fine shreds.
Chop the flat leaf parsley coarsely.
Make a dressing by mixing together the lemon juice, olive oil, sugar, salt, pepper, and Dijon mustard (if using).
Toss the dressing with the carrots really well, then taste.
Serve the carrot salad shortly after mixing.
To make in advance, prepare the carrots and dressing separately, and mix together as close to serving time as possible.
