Soup with Kletskas

Ingredients

  • 6 cups water

  • 2 cups chicken broth

  • 2lb chicken (or smoked chicken)

  • 4 potatoes

  • 1 grated carrot

  • 2 large onion (diced)

  • 1 bay leaf

  • 2 black peppercorns

  • 1 Tbsp vegetable oil

  • salt and pepper to taste

  • 8 Tbsp flour

  • 1/2c milk

  • 1 tsp butter

  • 1 egg

  • pinch of salt

Instructions

Set out the butter to soften.

First make the chicken boulion by washing and boiling the chicken in water + broth.

While the chicken boils, fry onion and carrots with some vegetable oil.

After the chicken has boiled for about 30min add potatoes, onion, carrot, bay leaf, peppercorns and spices.

Meanwhile, make the kletski: Separate the yolk from egg white and put the egg white to cool in the fridge.

Mix softened butter with the yolk, slowly mixing in milk and flour.

Whip the egg white with a mixer and add to the mixture.

The consistency of the entire mixture should be similar to thick sour cream.

Using a teaspoon, quickly lower small batches of mixture (1/2 tsp at a time) into the soup.

Boil for about 5 mins after adding kletski until they all enlarge and rise to the top.

Add salt and pepper to taste.
